How to Make Amla Murabba:
Ingredients:
- 10-12 medium-sized amlas (Indian gooseberries)
- 1.5 to 2 cups of sugar (adjust according to sweetness preference)
- 1 tablespoon of lemon juice (optional, for added tanginess)
- 2-3 cardamom pods, crushed
- 1-2 cloves (optional)
- 1 cinnamon stick (optional)
- Water (enough to cook the amla)
Method:
- Prepare the Amla: Wash the amlas thoroughly and remove the seeds. You can either cut the amlas into halves or quarters for easy consumption, or leave them whole.
- Boil the Amla: In a large pan, add water and bring it to a boil. Add the amlas and cook them for about 5-10 minutes until they soften. Be careful not to overcook them.
- Make the Syrup: Once the amlas are softened, remove them from the water and set them aside. In the same pan, add sugar and a little water to make a syrup. Stir well and let it simmer until the sugar dissolves completely, forming a thick syrup.
- Add Spices and Amla: Add the amlas to the syrup along with crushed cardamom, cloves, and cinnamon stick. Let the mixture cook on low heat for about 15-20 minutes, allowing the flavors to blend and the syrup to thicken further.
- Cool and Store: Once the syrup has thickened and the amlas are well coated, remove the pan from heat. Add lemon juice (if using) for a slight tangy taste. Let the amla murabba cool completely and then store it in an airtight jar.
