How to Make Bamboo Murabba:
Ingredients:
- 200-250 grams of tender bamboo shoots (fresh or canned)
- 1.5 to 2 cups of sugar (adjust based on your sweetness preference)
- 1 teaspoon of cardamom powder
- 1-2 cloves (optional)
- 1 cinnamon stick (optional)
- Water (for boiling bamboo shoots)
- 1 tablespoon of lemon juice (optional)
Method:
- Prepare the Bamboo Shoots: If you are using fresh bamboo shoots, peel off the outer layers and cut them into thin slices or small pieces. If using canned bamboo shoots, rinse them thoroughly to remove any preservatives.
- Boil the Bamboo Shoots: In a pan, bring water to a boil and add the bamboo shoots. Let them cook for about 10-15 minutes to soften. If they are too bitter, you can discard the water and boil them again with fresh water. Drain the water and set the bamboo shoots aside.
- Make the Syrup: In the same pan, add sugar and a small amount of water to create a syrup. Stir the syrup and let it simmer until the sugar dissolves completely.
- Add Spices and Bamboo Shoots: Once the syrup is ready, add the boiled bamboo shoots to the syrup along with cardamom powder, cloves, and cinnamon stick (if using). Cook the mixture on low heat for 20-30 minutes, allowing the syrup to thicken and coat the bamboo shoots.
- Cool and Store: Once the syrup has thickened and the bamboo shoots are well coated, remove the pan from the heat. Add lemon juice for a tangy kick, if desired. Let the bamboo murabba cool completely and then transfer it to an airtight jar for storage.
