How to Make Carrot Murabba:
Ingredients:
- 3-4 medium-sized carrots, peeled and grated
- 1 to 1.5 cups of sugar (adjust based on sweetness preference)
- 1 teaspoon cardamom powder
- 1-2 cloves (optional)
- 1 tablespoon lemon juice (optional, for a tangy taste)
- A pinch of saffron strands (optional, for color and aroma)
Method:
- Prepare the Carrots: Grate the carrots finely. You can use a food processor for quick and even grating.
- Cook the Carrots: In a heavy-bottomed pan, add the grated carrots and cook them on low to medium heat for about 5-10 minutes. Stir occasionally to prevent burning.
- Add Sugar and Spices: Once the carrots are cooked, add sugar to the pan. Stir well until the sugar dissolves and the mixture thickens slightly.
- Flavoring: Add cardamom powder, cloves (if using), saffron (if using), and lemon juice. Mix everything well and cook on low heat for about 15-20 minutes until the mixture becomes sticky and syrupy.
- Cool and Store: Once the carrot murabba reaches the desired consistency (it should not be too runny), remove it from the heat. Let it cool completely. Store it in an airtight jar.
